Last October the 23th, the team of people who make E M Combustion celebrated the birthday of one of our colleagues in the Txoko. This time we celebrated with an Iberian ham and good wine.
For those who do not know thoroughly the Basque traditions, Txokos are a culinary tradition that is linked to the cultivation of friendship. In the background, the cuisine is simply a manifestation of the proverbial generosity to share with like-minded friends and good table conversation. Traditionally reserved for meetings of just males, txokos currently are open to women.
A characteristic of txokos is that the partners themselves, usually men, are those who cook even provide lunch with raw materials from hunting, fishing or gathering mushrooms. The meetings usually end with a game of cards or singing in group.
